Mix flour, yeast, salt, sugar, vanillin sugar and lemon zest in a bowl. Press a depression in the middle. Melt the fat, add milk (except for a tablespoon) and an egg to the hollow. Mix everything with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for 30-40 minutes.
Knead the dough vigorously on a floured work surface and divide it into four pieces. Remove a third of the dough from each piece and form 1 head and 1 arm. Form thick rolls from the rest. Cut them into the middle. Bend "legs" outwards. Separate the rest of the egg. Spread the "seams" for the head and arms with egg white. Put the pieces together to form four figures. Whisk egg yolk with remaining milk and brush the figures with it.
