Cut-up cream with Rösti

Ingredients

Servings: 4
  • 1 kg Potatoes
  • 1 medium onion
  • 600 g Pork escalope
  • 1 go. Tbsp. flour
  • 1 egg, 8 tablespoons milk
  • 7-10 Tbsp salt, pepper, nutmeg
  • 5-6 Tbsp butter/margarine
  • 200 ml dry white wine or clear broth
  • 200 g Whipped cream
  • 1/2 bunch Parsley

Directions

    Wash the potatoes. Cover and cook for about 20 minutes. Quench, peel and let cool off

    In the meantime peel and roughly dice the onion. Wash the meat, dab dry and cut into strips. Dust with flour

    Whisk the egg, milk, salt, pepper and nutmeg. Coarsely grate the potatoes. Heat 1 tbsp. fat in a wide frying pan. Form 1/4 grater into a Rösti. Pour about 4 tbsp. egg milk over it. Fry for 5-8 minutes on each side. Keep warm. Fry 3 more Rösti in the same way

    Fry the onion in 1-2 tbsp. hot fat. Fry the meat well in it. Season with salt and pepper. Stir in wine and cream, bring to the boil and simmer for about 5 minutes. Season to taste. Wash and chop parsley. Arrange everything, garnish with parsley
