Cucumber with mashed potatoes

Ingredients

  • 800 g Potatoes
  • 7-10 Tbsp Salt
  • 75 g streaky smoked bacon
  • 1 red pepper
  • 2 Braised cucumbers (approx. 400 g each)
  • 400 ml Milk
  • 100 g grated gouda cheese
  • 7-10 Tbsp Pepper
  • 1/2 l Vegetable broth (instant)
  • 2- 3 TABLESPOONS sauce thickener
  • 1/2 TEASPOON dried thyme
  • 7-10 Tbsp Thyme

Directions

    Peel and wash the potatoes, boil them in salted water and cook them for about 20 minutes. Clean, wash and cut the peppers into small cubes. Finely dice bacon and leave it out in a pan. Halve the cucumber lengthwise, remove the seeds.

    Peel the cucumbers. Drain the potatoes. Add 200 ml milk and mash. Fold in 2/3 of the cheese, bacon and paprika. Season to taste with salt and pepper. Fill the puree into the braised cucumbers and put them into an ovenproof dish.

    Pour on the stock and cook in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for about 30 minutes. Shortly before the end of the cooking time, sprinkle the remaining cheese over the gherkins. Remove the cucumbers and keep warm.

    Pour stock into a pot. Add 200 ml milk and bring to the boil. Stir in sauce thickener and bring to the boil. Season sauce with thyme, salt and pepper. Serve braised gherkins with sauce together. Garnish with thyme.
