Cucumber salad with pomegranate seeds, figs, cottage cheese and radicchio

Ingredients

  • 1 Cucumber
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 Head radicchio salad
  • 2-3 piece(s) Spring onions
  • 4 Figs
  • 1/2 Pomegranate
  • 4 TABLESPOONS Cider vinegar
  • 1-2 TEASPOONS Honey
  • 4-5 Tbsp Olive oil
  • 200 g Cottage cheese (3,9 % fat)

Directions

    Wash and clean the cucumber and peel thick strips from the skin. Cut the cucumber into slices, season with salt and pepper, mix and let it stand for about 10 minutes. Wash and clean the radicchio and cut into strips.

    Clean and wash spring onions and cut them diagonally into thin rings. Clean, wash and cut figs into eighths. Remove the pomegranate seeds from the skin. Mix vinegar and honey and add oil. Mix cucumber, lettuce, spring onions, pomegranate seeds, figs and vinaigrette and season the salad with pepper, honey and possibly a little salt.

    Serve the salad. Add cottage cheese.
