Crusted roast with baked fruit

Ingredients

  • 750 g - 1 kg roast ham with rind
  • 7-10 Tbsp salt, pepper
  • 1 (200 g) Bag of dried mixed fruit
  • 750 g Brussels sprouts
  • 1 medium onion
  • 1 TABLESPOON butter/margarine
  • 7-10 Tbsp grated nutmeg
  • 1-2 TABLESPOONS Sauce thickener

Directions

    Wash the meat and pat dry. Carve the rind crosswise. Season meat. Roast in a roaster (22 x 35 cm) in a preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) for approx. 2 hours. Gradually add 3/4 l water

    Soak fruit in 1/4 l water. After approx. 1 hour add to the roast. Increase temperature to 200 °C (circulating air: 175 °C/gas: level 3)

    Clean and wash the Brussels sprouts. Peel and chop the onion and sauté in hot fat. Steam cabbage briefly. Add 1/4 l water, salt and nutmeg. Cover and cook for about 20 minutes.

    Remove the roast. Sieve the roast stock, degrease. Fill up to 3/8 l with water, thicken. Arrange everything. Served with: Boiled potatoes
