Crawfish with spicy sauce

Ingredients

Servings: 6
  • 2 cooked lobsters (600 g each)
  • 5 TABLESPOONS Oil
  • 7-10 Tbsp Juice of 1 lemon
  • 1 Garlic clove
  • 1 Spring onion
  • 1/2 bunch flat-leaf parsley, dill and chives
  • 7-10 Tbsp Salt
  • 7-10 Tbsp a pinch of white pepper
  • 1 pinch Sugar

Directions

    Leave lobsters in halves in the fish shop or cut them lengthwise yourself with a sharp knife. Remove the offal from the head end with a spoon. For the marinade, mix oil with lemon juice.

    Finely chop the garlic. Clean and wash the spring onion and cut into wafer-thin rings. Wash the herbs, put some parsley aside for garnishing. Finely chop the remaining parsley and dill. Cut the chives into small rolls.

    Then add garlic, onion and herbs to the marinade and season with salt, pepper and sugar. Arrange lobster halves on plates and garnish with parsley. Finally, pour part of the marinade over the lobster halves and add the rest in a sauce boat.

    Serve with crisp, fresh white bread and a well-chilled white wine.
