Ingredients

  • 400 g Apples (about 2 pieces)
  • 2 TABLESPOONS Lemon juice
  • 2 TABLESPOONS cherry jam
  • 70 g Butter or margarine
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 2 Eggs (size M)
  • 100 g Flour
  • 50 g Cornstarch
  • 2 coated Tsp Baking Powder
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 40 g flaked almonds
  • 4 TABLESPOONS Apricot Jam
  • baking paper

Directions

    Wash apples, dab dry and prick out the core. Cut the apples into slices about 1 cm thick. Sprinkle with lemon juice. Line the bottom of a springform pan (24 cm Ø) with baking paper and spread the apple slices on the bottom.

    Put cherry jam in the middle of the apple rings. For the dough mix fat, sugar and vanilla sugar well. Add eggs and stir until frothy. Mix flour, cornstarch, baking powder and lemon peel and stir into the dough.

    Spread on the apples and smooth them down. Bake in the preheated oven (electric: 175 °/ gas: level 2) for 45-50 minutes. Leave to rest in the pan for approx. 10 minutes, turn out, remove baking paper and let cool off.

    Meanwhile roast the almond flakes in a pan until golden brown. Heat the apricot jam, pass it through a sieve and coat the cake with it. Press the flaked almonds onto the edge coated with chocolate coating.
