Clean and wash spring onions and cut into fine rings. Cut the mango from the stone. Peel and chop the flesh. Wash lemon balm, shake dry and cut into fine strips. Carefully mix prawns with spring onions, mango and lemon balm. Season with lime juice, salt, pepper and sugar
Spread the slices of bread with fat, place them on plates and arrange the salad on top. Garnish with chicory if desired
