Couscous salad with pistachios, goat cream cheese and chopped rolls

Ingredients

  • 250 g Couscous
  • 7-10 Tbsp Salt
  • 100 g Pistachio kernels
  • 1 (approx. 500 g) Cucumber
  • 1 collar flat leaf parsley
  • 6 Stem(s) Mint
  • 100 g Lamb's lettuce
  • 2 Garlic cloves
  • 125 ml fresh squeezed lemon juice
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 7-8 TABLESPOONS Olive oil
  • 2 discs Toast bread (approx. 20 g each)
  • 1 Onion
  • 400 g Minced beef
  • 1 TEASPOON medium hot mustard
  • 1/4 TEASPOON Cumin
  • 1 egg (size M)
  • 200 g Fresh goat cheese

Directions

    Prepare the couscous in salted water according to the instructions on the packet. Coarsely chop the pistachios. Wash the cucumber thoroughly, peel thinly so that a little green skin remains. Finely dice the cucumber. Wash parsley and mint, shake dry, pluck leaves from the stalks and chop finely.

    Clean and wash the salad and cut into fine strips. Peel garlic and chop finely. Mix lemon juice, salt, pepper and sugar well. Fold in 5 tablespoons of oil. Mix couscous, cucumber, herbs, pistachios and salad.

    Mix in the lemon vinaigrette and let it steep for about 30 minutes.

    Soak bread in cold water. Peel and finely chop the onion. Squeeze the bread well. Put minced meat, mustard, onion, cumin, 1 teaspoon salt, 1/2 teaspoon pepper, bread and egg in a mixing bowl and knead well.

    Form 12 rolls from the chopped mass.

    Heat 2-3 tablespoons of oil in a large frying pan, fry the chopped rolls for 6-8 minutes while turning them, remove them. In the meantime, carefully mix cheese in flakes into the salad. Arrange some lettuce and minced meat rolls on plates.

    Serve the rest of the salad and the remaining minced rolls separately.
