Ingredients

  • 75 g Mustard seed
  • 1000 g Courgette
  • 450 g Carrots
  • 2 Onions
  • 2 TABLESPOONS Oil
  • 375 g Sugar
  • 2 TEASPOONS Turmeric
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Allspice seeds
  • 2 Bay leaves
  • 225 ml White wine vinegar

Directions

    Roast mustard seed in a pan without fat, remove from heat. Wash and clean the zucchini. Clean and peel the carrots. Peel onions. Coarsely grate vegetables.

    Heat oil in a large pot. Fry the vegetables briefly. Add sugar and let it caramelize slightly. Season with turmeric, 1 tablespoon salt and pepper. Add mustard seed, allspice and bay leaf, deglaze with vinegar.

    Simmer everything open, stirring several times for about 20 minutes, until the liquid is almost overcooked. Season to taste once more. Immediately pour into clean, hot rinsed glasses and close them.
