Coloured vegetable platter with minced steaks

Ingredients

  • 400 g baby potatoes
  • 3 medium-sized onions
  • 1 Garlic clove
  • 1 (approx. 250 g) Courgette
  • 2-3 (approx. 350 g) Carrots
  • 1 (approx. 500 g) cauliflower
  • 3-4 (approx. 200 g) Tomatoes
  • 2 Branches of rosemary
  • 3 Stem(s) Thyme
  • 1 TABLESPOON + 1 tsp oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TEASPOON Vegetable broth (instant)
  • 1/2 bunch Parsley
  • 400 g Beefsteak minced meat
  • 2 tablespoons (40 g) Herb curd
  • 7-10 Tbsp Sweet peppers
  • 1-2 TEASPOONS White wine vinegar

Directions

    Wash the potatoes and cook for about 15 minutes. Peel onions and cut into slices. Peel garlic and chop finely. Clean and wash the zucchini, cut in half lengthwise and cut into pieces.

    Peel, wash and slice the carrots. Clean, wash and cut the cauliflower into florets. Wash and slice the tomatoes. Wash thyme and rosemary and chop coarsely, except for a little bit for garnishing.

    Drain, rinse and peel the potatoes. Heat 1 tablespoon of oil in a large coated pan with lid. Fry the onions and garlic in it. Fry the potatoes and vegetables in it in portions while turning for about 5 minutes.

    Put all the vegetables and potatoes back into the pan. Stir in the herbs. Season with salt and pepper. Deglaze with 300 ml water, bring to the boil and stir in stock. Cover and cook for 6-8 minutes. Wash and finely chop the parsley.

    Knead minced meat, curd and parsley. Season with salt, pepper and paprika. Form 4 flat minced steaks from the mixture. Brush the contact grill with 1 teaspoon of oil and preheat. Grill the minced steaks in it for about 10 minutes (or fry them in hot oil in a grill pan for about 5 minutes on each side).

    Season vegetables with salt, pepper and vinegar. Remove the steaks. Drain the resulting roast from the grill. Arrange steaks and vegetables. Sprinkle with gravy. Garnish with remaining herbs.
