Coloured tomato salad

Ingredients

Servings: 6
  • 1/2 Ciabatta (approx. 300 g)
  • 10-13 Tbsp Olive oil
  • 7-10 Tbsp Salt
  • 5 red onions
  • 500 g yellow, black, green and red curly tomatoes
  • 10 Stem(s) Basil
  • 2 (125 g each) Bag of buffalo mozzarella
  • 10-12 TABLESPOONS light balsamic vinegar
  • 7-10 Tbsp freshly ground black pepper
  • 1-2 TEASPOONS Sugar

Directions

    Cut the bread into slices. Cut the slices in half. Heat a total of 4-6 tablespoons of oil in portions in a large frying pan. Fry the slices of bread on both sides while turning them and take them out. Season with salt

    Onions peel, halve and in columns cut. Wash, clean and slice the tomatoes. Wash basil, shake dry, pluck leaves from stems. Drain the mozzarella, cut into slices

    Mix vinegar, salt, pepper and sugar well. Fold in 6-7 tablespoons of oil. Mix tomatoes, onions, basil, mozzarella and about 3/4 of toasted bread. Mix in the vinaigrette. Leave to stand for about 30 minutes. Arrange in a deep bowl and sprinkle with pepper. Add the remaining slices of bread
