Coleslaw with mango

Ingredients

  • 1/2 Head White cabbage (about 400 g)
  • 1 pickled cucumber
  • 1/2 bunch Spring onions
  • 1 (approx. 350 g) Mango
  • 1 TEASPOON Palm sugar (or brown sugar)
  • 2 TABLESPOONS Soy sauce
  • 2 TABLESPOONS Lime juice
  • 2 red chillies

Directions

    Clean and wash the vegetables. Cut cabbage into strips, cucumber lengthwise into quarters, then into slices, spring onions into rings. Peel mango. Cut the flesh into slices from the stone and dice.

    Dissolve the sugar in a tablespoon of hot water. Stir in soy sauce and lime juice. Carve chillies lengthwise, remove seeds, cut into fine rings and stir into the marinade. Mix the vegetables and fruit, add the marinade and leave to stand for an hour.
