Coconut wafers with caribbean compote

Ingredients

  • 150 g soft butter
  • 40 g Sugar
  • 1 pinch Salt
  • 3 Eggs (size M)
  • 250 g Flour
  • 30 g + 2 tablespoons grated coconut
  • 1 coated Tsp Baking Powder
  • 200 ml Coconut milk
  • 2 ripe mangoes
  • 1 ripe papaya
  • 1 TABLESPOON Lemon juice
  • 1-2 TABLESPOONS Orange liqueur
  • 7-10 Tbsp Coconut chips
  • 7-10 Tbsp Grease

Directions

    Cream butter, sugar and salt. Stir in the eggs one after the other. Mix flour, 30 g grated coconut and baking powder, alternately stir in with the coconut milk. Heat waffle iron and grease lightly. Bake 6 waffles from the dough one after the other.

    Cool the waffles on a cake rack. Peel mangos and papaya. Cut the flesh of the mangos from the stone and dice them. Halve the papaya, remove the seeds carefully with a spoon. Cut the flesh into cubes. Mix the fruits. Puree 2 tablespoons of fruit, lemon juice and orange liqueur and mix with the fruit. Pour fruit into glasses. Divide waffles into individual hearts. Put 2 wafer hearts in the middle of each glass.
