Mix sugar, eggs, buttermilk, flour, baking powder and a pinch of salt with the whisk of the hand mixer to a smooth dough.
Place the dough in a greased or greaseproof pan lined with baking paper and smooth it down.
For the topping, mix the coconut flakes and sugar and spread evenly on the dough.
Bake the cake at 140 °C for about 30 minutes. Take it out of the oven and immediately spread 2 cups of cream evenly over it and let it cool down.
