Ingredients

  • 900 g Cherries
  • 200 g Butter
  • 200 g Fine dark chocolate (70% cocoa content)
  • 150 g Flour
  • 300 g demerara sugar
  • 75 g Cocoa powder
  • 1 package Baking Powder
  • 5 sachets Vanillin sugar
  • 1 pinch Salt
  • 7 Eggs (size M)
  • 1 coated tablespoon cinnamon powder
  • 2 packages Cream stabiliser
  • 750 g Whipped cream
  • 7-10 Tbsp Cinnamon powder
  • 7-10 Tbsp Fat and flour

    Wash the cherries, drain well, remove the stalks, halve and stone them. Melt the butter and let it cool down a little. In the meantime, roughly chop the chocolate and melt it over a warm water bath. Mix flour, sugar, cocoa, baking powder, 2 packets of vanillin sugar and salt in a large bowl.

    Place the eggs in a large mixing bowl and whisk until creamy. Allow butter to run in and stir in. Add flour mixture in several portions and stir in.

    Add chocolate and stir in.

    Pour the dough into a greased, floured fat pan of the oven (approx. 35 x 40 cm). Smooth and spread approx. 350 g cherries on the dough. In a preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: see

    Remove from the oven, place on a kitchen grid and allow to cool. Mix 3 sachets of vanilla sugar, cinnamon and cream thickener. Whip the cream and finally pour in the sugar mixture. Spread the rest of the cherries on the base and spread the cinnamon cream loosely on top.

    Sprinkle with some cinnamon and cut into pieces.
