Chocolate yoghurette cake

Ingredients

  • 350 g Dark chocolate
  • 250 g Butter
  • 250 g Sugar
  • 8 Eggs (size M)
  • 1 pinch Salt
  • 125 g Flour
  • 15 g + 1 teaspoon + approx. 1 tablespoon cocoa powder
  • 125 g ground almonds with skin
  • 150 g frozen strawberries
  • 600 g Double cream cream cheese
  • 2 packages Vanillin sugar
  • 1 TABLESPOON + 125 g icing sugar
  • 7-10 Tbsp Fat and breadcrumbs

Directions

    Coarsely chop 250 g chocolate and melt with butter and sugar in a small pot while stirring. Separate the eggs. Beat the egg white in 2 portions with a little salt until stiff. Mix flour and 15 g cocoa, then stir in egg yolks and almonds (becomes crumbly). Add hot chocolate butter mixture to the flour mixture while stirring. Fold in 2 portions of beaten egg white

    Place the dough in a greased box form (30 cm long, 11 cm wide, approx. 1,8 litres capacity) sprinkled with breadcrumbs (dough is very soft). Bake in the preheated oven, mid-height (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 45 minutes (is still moist when sticks are used). Let the cake cool in the mould on a cake rack for 30-40 minutes, then carefully remove from the mould and turn over onto a plate. Let it cool down for at least 4 hours

    Let strawberries thaw on a sieve for about 30 minutes, then dice finely. Mix 350 g cream cheese, vanillin sugar and 1 tablespoon icing sugar. Fold in strawberries. Cut the box cake in half horizontally. Spread the cream cheese cream on the bottom base and cover with the top base. Chill the cake for about 30 minutes

    Coarsely chop 100 g chocolate, melt over a warm water bath and let it cool down for about 15 minutes. Mix 125 g icing sugar and 1 teaspoon cocoa and sieve into a bowl. Add 250 g cream cheese and whisk for 1-2 minutes until thick and creamy. Add liquid chocolate and stir in. Spread the chocolate frosting on all sides of the box cake and chill for at least another 1 hour. Dust with approx. 1 tbsp. cocoa
