Chocolate soup with poached pears

Ingredients

  • 150 g Sugar
  • 2 TABLESPOONS Honey
  • 7-10 Tbsp juice and peel of 1 untreated lemon
  • 2 ripe, but not too soft pears (e.g. trout; approx. 150 g each)
  • 200 g Dark chocolate
  • 200 g Whipped cream
  • 600 ml Milk
  • 1 package Vanillin sugar
  • 2 Egg yolk (size M)
  • 40 g Hazelnut flakes
  • 7-10 Tbsp Mint

Directions

    Put 500 ml water, 100 g sugar, honey, lemon juice and zest in a small pot, bring to the boil. In the meantime, peel, quarter and core the pears. Place pears in the boiling stock and poach over low to medium heat for 8-10 minutes. Leave to cool in the stock. Finely chop the chocolate.

    Bring 150 g cream, milk, 50 g sugar and vanillin sugar to the boil, remove from heat. Melt the chocolate in it. Mix the egg yolks with some hot liquid. Heat the chocolate soup again while stirring. Add the egg yolks to the soup and do not let it boil. Drain the pears and cut them into slices. Pour soup and pears into deep plates. Put 50 g cream in streaks on the soup. Sprinkle with hazelnut leaves.
