Break chocolate into pieces the day before. Warm the cream in a pot lukewarm. Mint bars, except 4 for decoration, and add chocolate to the cream. Melt in it at low heat while stirring constantly.
Pour the chocolate cream into a mixing bowl and chill overnight.
The next day, whip the chocolate cream until creamy with the whisk of the mixer. Arrange the mint cream. Cut the remaining mint bars in half. Decorate the cream as desired with mint bars or chopped roasted almonds.
Keep cool until serving.
