Chocolate crème brûlee with caramelized apple slices

Ingredients

  • 300 g Whipped cream
  • 150 g Dark chocolate
  • 3 Eggs (size M)
  • 3 Egg yolk (size M)
  • 10 TABLESPOONS + 8 teaspoons sugar
  • 4 small apples
  • 2-3 TEASPOONS Lemon juice

Directions

    Bring the cream to the boil in a pot. Chop the chocolate and melt in the cream while stirring. Heat the cream-chocolate mixture (do not let it boil!), remove from the stove. Mix eggs, egg yolks and 5 tbsp. sugar. Stir in still hot chocolate-cream mixture.

    Place 8 flat, ovenproof forms (approx. 150 ml content) on the fat pan of the oven. Pour the mixture into the forms. Pour hot water into the fat pan (until just under the edge of the moulds). Place in a preheated oven (electric cooker: 125 °C/ convection oven: 100 °C/ gas: not suitable) for 50-60 minutes. Wash and quarter the apples and cut out the core. Cut the fruit flesh into slices, place in a bowl and sprinkle with lemon juice. Caramelise 5 tbsp. sugar and 5 tbsp. water in a pan until light brown. Sauté apple slices for 1-2 minutes, pour into a bowl and let cool off. Remove the moulds and let them cool down for about 10 minutes. Sprinkle creams evenly with 1 tsp.
