Ingredients

  • 250 g Flour
  • 50 g ground almonds without skin
  • 1 coated Tsp Baking Powder
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 1 egg (size M)
  • 1 Organic Lime
  • 125 g Butter
  • 1 egg yolk and 1 teaspoon cream for spreading
  • 100 g Icing sugar
  • 7-10 Tbsp red, blue and yellow food colouring
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film
  • baking paper
  • 4 Disposable piping bag

Directions

    Mix flour, almonds and baking powder in a bowl. Add sugar, vanillin sugar, salt and egg. Wash the lime thoroughly, dab dry and finely grate the peel. Squeeze the lime. Cut cold butter into cubes and place in the bowl together with the lime zest. Knead first with the dough hooks of the hand mixer, then quickly with your hands to a smooth shortcrust pastry. Wrap the dough in foil and chill for approx. 30 minutes

    Roll out the dough 2-3 mm thin on a floured work surface. Cut out about 12 donkeys, cats, dogs and cocks each. (Make sure that all animals are looking in the same direction. Otherwise, place them on the baking tray upside down). Spread the cut-out animals on 2-3 baking trays lined with baking paper. (Make sure that donkeys and cats with a longer baking time can use one baking tray, but taps and dogs have to use an extra baking tray because of shorter baking time). Mix egg yolk and cream and brush the animals with it. 3. bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) donkeys and cats for approx. 8 minutes, dogs and cocks for 6-7 minutes. Let animals cool down on the baking tray for 5-10 minutes. Then lift them onto a cake rack and let them cool down completely

    Mix icing sugar and approx. 1 1/2 tbsp lime juice to a thick icing. Quarter the icing, leave 1/4 white, colour the remaining quarters red, blue and yellow. Put the icing in disposable piping bags (or piping bags folded from parchment or baking paper) and cut off a small tip at a time. Decorate the animals as you wish and leave to dry for about 2 hours
