Ingredients

  • 7-10 Tbsp grated peel and juice of 3 untreated lemons
  • 1 kg Sugar
  • 50 g Citric acid
  • 2 Mangoes (about 500 g each)
  • 200 ml apple juice
  • 1,5 l cold mineral water

Directions

    The day before, mix the lemon rind, sugar, citric acid and 1 litre of hot water, let it cool down. Add lemon juice. Pour the syrup into 2 bottles (results in approx. 1.7 litres) and leave to soak overnight in the fridge.

    Peel the mangos, cut the flesh into slices from the stone. Cut out fish of different sizes from the flesh. Use the rest of the flesh for other purposes. Put the fish into a large punch bowl.

    Add 300 ml syrup and apple juice. Just before serving, pour on mineral water. Depending on how sweet you want the punch to be, you can also add a little more water.

    The rest of the syrup keeps in the refrigerator for 2-3 weeks. Just fill a finger wide into a glass and pour mineral water over it.
