Chicken skewers with mango chutney

Ingredients

Servings: 4
  • 2 Mangoes (about 400 g each)
  • 3-4 red onions
  • 1 walnut-sized piece of ginger
  • 1/2 red chilli pepper
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Juice of 1 lime
  • 2 TABLESPOONS Sugar
  • 7-10 Tbsp Curry Powder
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Courgette
  • 4 Chicken fillets (approx. 150 g each)
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Mint
  • 8 Shashlik skewers

Directions

    Peel mangoes, onions and ginger. Cut mangos into large and 1-2 onions into fine cubes. Halve 1/4 chilli pepper lengthwise, remove seeds and chop finely. Heat vinegar, lime juice and sugar in a pot.

    Add the mangoes, onions and chilli. Press the ginger into the chutney using a garlic press. Simmer for 5-10 minutes. Season to taste with curry, salt and pepper. In the meantime cut the rest of the onions into slices.

    Wash and clean the zucchini, cut them in half lengthwise and cut into thick slices. Wash the flesh, dab dry and cut into cubes. Put onions, zucchini and meat alternately on the skewers. Season skewers with salt, pepper and curry.

    Heat the oil in portions in a frying pan and fry 4 skewers on each side for 6-8 minutes, remove and keep warm. Arrange the skewers with the chutney. Wash the mint and cut the remaining chilli pepper into fine rings.

    Garnish skewers with mint and chilli and sprinkle with curry. Baguette tastes good with it.
