Chicken noodle casserole in tomato sauce

Ingredients

Servings: 4
  • 2 medium-sized onions
  • 2 Garlic cloves
  • 1 can(s) (850 ml) peeled tomatoes
  • 4-5 Tbsp Olive oil
  • 2 TABLESPOONS Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 g Chicken filet
  • 2-3 TABLESPOONS Oil
  • 350 g Tortiglioni pasta
  • 2 (125 g each) balls of mozzarella cheese
  • 500 g cherry tomatoes
  • 1 Pot of basil
  • 1/2 Pot of oregano (alternatively 1 tsp dried oregano)
  • 7-10 Tbsp Grease

Directions

    Peel onions and garlic. Dice onions, press garlic through a garlic press. Roughly cut the tomatoes in the tin with a long knife. Heat oil in a pan, fry onions and garlic.

    Add canned tomatoes and tomato paste. Season with salt and pepper and simmer covered for 15-20 minutes. In the meantime wash and dry the chicken fillets. Heat oil in a pan and fry the fillets for 10-12 minutes, turning them over.

    Season with salt and pepper, remove from the pan and allow to cool. Put the noodles in plenty of boiling salted water and cook them for about 10 minutes until they are bubbling. Drain the mozzarella and cut into slices.

    Wash the cherry tomatoes, drain and cut in half. Wash the basil and oregano, dab dry and put some basil aside for garnishing. Finely chop the remaining herbs and add to the tomato sauce together with the cherry tomatoes.

    Cover and simmer for another 5 minutes, season with salt and pepper. Mix the pasta with half of the tomato sauce and place in a greased casserole dish. Cut the chicken fillet into slices, place them on the noodles and spread the remaining tomato sauce on top.

    Cover with mozzarella slices and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 30 minutes. Serve garnished with basil.
