Say cheese! Cheese noodles

Ingredients

  • 5 Eggs (Gr. M)
  • 200 ml Mineral water
  • 1 collar Chives
  • 4 small onions
  • 250 g Mountain cheese (piece)
  • 250 g Emmental (piece)
  • 2 TABLESPOONS clarified butter
  • 7-10 Tbsp Cayenne pepper
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Spätzle/potato press

Directions

    Mix flour and 1-2 teaspoons of salt in a mixing bowl. Add eggs and mineral water.

    Now your arm muscles are in demand! Beat everything with a wooden spoon with a hole (super important!) until the dough is smooth and bubbles appear.

    The dough should be nice and thick so that it flows viscously from the spoon. If the consistency is too firm, add a little more water. If the dough is too liquid, add flour by the spoonful.

    Let the dough swell for about 10 minutes.

    In the meantime cut the chives into fine rolls (can be done with scissors superfix). Peel onions and cut or slice them into 2-3 mm thin rings. Grate cheese roughly.

    Heat clarified butter in a frying pan. Slowly fry the onion rings until crispy brown. Dust with cayenne pepper and continue to fry for approx. 30 seconds. Just that short? Yes, so that the powder does not burn and possibly tastes bitter.

    Drain the onions on kitchen paper.

    Boil up about 3-4 l salted water in a large pot. Press the spaetzle dough in portions through a spaetzle or potato press. Cut the dough with a moistened knife and let it slide into the water.

    As soon as the spaetzle swim on the surface, let them cook for about 1 minute. Then lift them out with a skimmer, dip them directly into a bowl of cold water, lift them out again immediately and let them drain in a sieve.

    Preheat oven (electric cooker: 100 °C/circulating air: 80 °C/gas: see manufacturer). Put half of the grated cheese into a large casserole dish. Add the warm spaetzle with 3-4 tablespoons of cooking water. Sprinkle the rest of the cheese on top.

    Mix everything carefully. Season with salt and pepper. Bake in a warm oven for 4-5 minutes. Serve with chives and fried onions.
