Drain the cherries well. Stir fat and sugar until creamy. Separate eggs. Stir egg yolk, lemon peel, salt, quark, milk and flour into the fat-sugar mixture. Beat the egg whites until stiff.
Coarsely chop the pistachios. Fold in beaten egg whites, cherries and pistachios (keep 2 tablespoons). Pour the mixture into a greased casserole dish and bake in a preheated oven (electric range: 200 °C/ gas: level 3) for approx. 40 minutes. Sprinkle with the remaining pistachios, dust with icing sugar
