Cherry cold dish with snow dumpling

Ingredients

  • 600 g Cherries
  • 1 Organic Orange
  • 4-6 Tbsp + 150 g sugar
  • 1 package red fruit jelly raspberry
  • 2 fresh protein
  • 7-10 Tbsp Salt

Directions

    Wash, stalk and stone the cherries. Orange hot wash, dry off. Rub the skin thinly. Then peel the orange so that the white skin is completely removed. Cut out the fillets with a sharp knife.

    Press the juice out of the parting skins.

    Boil up cherries with 3⁄4 l water, 2-3 tablespoons sugar, orange juice and zest. Cover and simmer for 8-10 minutes. Stir red berry jelly powder with 1⁄4 l water and 150 g sugar until smooth. Bind cherries with it. Add orange fillets.

    Let it cool down.

    For the dumplings, beat the egg white and 1 pinch of salt until stiff. Add 2-3 tbsp. sugar. Keep beating until the sugar has dissolved.

    Bring the water to the boil in a wide saucepan. Form cams with 2 teaspoons of the egg white mass. Slide into hot, no longer boiling water. Cover and let it simmer for 4-5 minutes at low heat.

    Season cold dish with sugar again. Arrange dumplings on top.
