Wash, stalk and stone the cherries. Dice the apricots. Cut the vanilla pod in half lengthwise and scrape out the vanilla pulp. Put quark into a bowl and stir until smooth. Mix eggs, sugar, pudding powder and salt one after the other with the whisk of the hand mixer. Stir in the apricot cubes
Grease a fat pan (32 x 39 cm) and sprinkle with flour. Add the curd mixture and smooth it down. Spread the cherries on top and bake in the preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 50-60 minutes on the bottom shelf. Remove and let cool off
Roast the flaked almonds in a pan without fat until golden brown. Bring jam and 1 tablespoon of water to the boil and spread the cake with it
