Ingredients

Servings: 6
  • 1 Bread roll (from the previous day)
  • 1 collar Parsley
  • 100 g dried soft tomatoes
  • 4 Onions
  • 1 Garlic clove
  • 4 TABLESPOONS Oil
  • 1.5 kg mixed mince
  • 3 Eggs
  • 3 TABLESPOONS Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 300 g Breakfast bacon (Bacon)
  • 250 g Cheddar cheese (piece)
  • 1 kg Potatoes
  • 2 TABLESPOONS Tomato ketchup
  • 1 TEASPOON Sweet peppers
  • 2 TABLESPOONS Flour
  • 2 Gherkins
  • 3 TABLESPOONS clarified butter
  • baking paper

Directions

    For the roast, soak rolls in cold water. Wash and chop the parsley. Finely dice the tomatoes. Peel 2 onions and garlic, dice finely. Heat 1 tablespoon of oil in a small pan. Sauté the diced onions and garlic in it until transparent. Knead minced meat, eggs, squeezed bread roll, tomato paste, parsley, tomatoes and onion mixture and season with 1 slightly heaped tsp. salt and pepper.

    Place the bacon on a baking tray lined with baking paper, slightly overlapping to form a rectangle (approx. 31 x 33 cm). Spread the minced meat mixture on top, leaving about 2 cm of edge free all around. Cut the cheese into pieces about 5 cm wide and lay them lengthwise on the middle of the mince. Cover the minced meat and bacon with the baking paper (see picture below left). Press the minced meat together at the open edges and press on the bacon. Bake in a preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer) for approx. 1 1⁄4 hours.

    For the roast potatoes peel, wash and cut the potatoes into pieces. Cover and cook in salted water for about 15 minutes. Drain.

    Mix ketchup, 3 tablespoons of oil and 1 teaspoon of paprika. Spread the roast with it and continue to bake for about 15 minutes.

    Peel 2 onions, cut into rings and turn them in flour. Cut gherkins into sticks. Heat clarified butter in a large coated pan. Fry the onions until crispy. Take out. Fry potatoes in hot frying fat until golden brown. Season with salt, pepper and paprika. Sprinkle meatloaf with fried onions and gherkins. Arrange everything. Serve with green beans.

    The core of the cheese should be well coated with the minced mixture everywhere. This is best done with the help of baking paper. You can easily beat the mince around the cheddar pieces with this.
