Cut ham and cheese into strips. Clean and wash spring onions and radishes. Cut spring onions into fine rings, radishes into thin slices and mix everything.
Whisk mustard, vinegar, honey, salt and pepper. Add the oil. Wash the chervil and put something aside for garnishing. Finely chop the rest of the chervil. Mix marinade and chervil into the salad ingredients.
Leave everything to soak for at least 1 hour. Season salad again and garnish with the remaining chervil.
