Ingredients

Servings: 4
  • 1 medium-sized cauliflower (approx. 750 g)
  • 7-10 Tbsp Salt
  • 1 Bread rolls from the previous day
  • 1 Onion
  • 750 g mixed minced meat
  • 1 Egg
  • 2 TEASPOONS medium hot mustard
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Oil
  • 750 g (300 g) peas or 1 package of frozen peas
  • 250 g Carrots
  • 30 g Butter or margarine
  • 30 g Flour
  • 1/4 l Milk
  • 1/2 bunch Parsley
  • 1/2 bunch Chives

Directions

    Clean the cauliflower, cut into florets and wash. Cook the florets in 1/2 litre boiling salted water for about 10 minutes. Drain and collect the cooking water. Soak the rolls in cold water. Peel and chop the onion. Squeeze the bread roll and knead with minced meat, egg, onion, mustard, salt and pepper.

    Mix half of the cauliflower florets into the minced mass and form an oblong loaf. Put 1 tablespoon of oil in a roasting pan and place the meatloaf in it. Without lid, roast in a preheated oven (electric: 200 °C / gas: level 3) for 50-60 minutes. In the meantime, peel peas from the pods, wash and drain. Clean, wash and cut the carrots into pieces. Bring the cauliflower water to the boil again and cook the carrots and peas for about 10 minutes. Drain and collect the vegetable water. Heat the fat in a pot and sauté the flour in it. Add milk and 1/4 litre of vegetable water while stirring, bring to the boil and simmer for about 5 minutes. In the meantime wash parsley and chives, dab dry and put something aside for garnishing. Chop the rest of the parsley and cut the chives into fine rolls.

    Bring the cauliflower water to the boil again and cook the carrots and peas for about 10 minutes. Drain and collect the vegetable water. Heat the fat in a pot and sauté the flour in it. Add milk and 1/4 litre of vegetable water while stirring, bring to the boil and simmer for about 5 minutes. In the meantime wash parsley and chives, dab dry and put something aside for garnishing. Chop the rest of the parsley and cut the chives into fine rolls. Add herbs to the sauce and season with salt and pepper. Add the carrots, peas and remaining cauliflower to the hot sauce and warm up briefly. Arrange meatloaf and vegetables on a plate. Serve garnished with parsley and chives. Boiled potatoes taste good with it
