Carrot salad with ginger-honey sauce

Ingredients

Servings: 8
  • 2 TABLESPOONS Sesame
  • 6 Carrots
  • 2 red peppers
  • 4 stalks of celery
  • 1 red onion
  • 1⁄2 bunch/pot of coriander
  • 1 piece(s) (approx. 20 g) Ginger
  • 2 TABLESPOONS Soy sauce
  • 1 TABLESPOON liquid honey
  • 7-10 Tbsp Juice from 1⁄2 Lemon
  • 2 TABLESPOONS oil, 2 tablespoons sesame oil
  • 7-10 Tbsp salt, pepper

Directions

    Roast the sesame seeds in a pan without fat until golden brown and remove. Peel, wash and roughly grate the carrots. Clean, wash and cut the peppers into medium sized pieces. Clean, wash and thinly slice the celery.

    Peel and halve the onion and cut into fine strips. Wash coriander and shake dry, pluck off leaves and chop.

    Peel the ginger and chop very finely. Mix with soy sauce, honey and lemon juice. Add both oils. Season to taste with salt and pepper. Mix all prepared ingredients well with the sauce. Cover the salad and let it stand for 2-3 hours.
