Carrot-apricot jam

Ingredients

  • 750 g Carrots
  • 300 g Apricots
  • 1 Branch Thyme
  • 7-10 Tbsp Juice and peel of 1 untreated orange
  • 1 kg Gelling sugar (1:1)

Directions

    Clean, peel and finely grate the carrots. Weigh 700 g grated carrots. Wash apricots, drain well, cut in half and remove stone. Weigh 250 g fruit. Cut fruits into small cubes. Mix carrots, apricots, thyme, orange juice and zest well with the jam sugar in a large pot.

    Leave to stand for 3-4 hours. Bring the mixture slowly to the boil while stirring. Continue stirring and let it bubble for 3-4 minutes. Immediately pour into clean, prepared glasses up to the rim. Close the glasses and put them on the lid for about 5 minutes. Turn them over again and let them cool down completely
