Mix butter, honey, crème fraîche, salt, cardamom and egg with the whisk of the hand mixer. Add flour and knead with the dough hooks of the hand mixer. Then knead again with your hands to a smooth dough. Form into a roll of about 40 cm. Wrap in foil and chill for about 1 hour. Whisk egg yolk and cream.
Then cut approx. 40 slices from the dough roll. Form an approx. 18 cm long strand (thin roll) from each slice. Form pretzels from the strands. Put them on two baking trays lined with baking paper, brush with whisked egg yolk and sprinkle with sugar. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 12-15 minutes. Remove from the oven, place on a rack and allow to cool
