Caramel plum cake with meringue

Ingredients

  • 1.5 kg Plums
  • 250 g Butter or margarine
  • 400 g Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp Salt
  • 8 Eggs (size M)
  • 350 g Flour
  • 2 packages Pudding powder "caramel flavour" (for cooking)
  • 2 heaped Tsp baking powder
  • 1 TEASPOON Lemon juice
  • 7-10 Tbsp Grease

Directions

    Wash the plums, drain, stone and halve them. Cream fat, 200 g sugar, vanillin sugar and 1 pinch of salt. Separate 4 eggs. Put the egg whites in a cool place. Stir in egg yolks and 4 eggs one after the other.

    Mix flour, pudding powder and baking powder, stir briefly into the mixture. Spread the dough evenly in the greased fat pan of the oven (32 x 39 cm). Sprinkle plums loosely onto the dough. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 25-30 minutes

    In the meantime beat the egg whites until stiff. Gradually add 200 g sugar and 1 pinch of salt. Stir in lemon juice. Pour the meringue mixture into a piping bag with perforated spout. Spray the finished cake with uneven spots, keeping a little distance between them. Brown lightly for another 5 minutes at the same temperature. Take out and let cool down
