Caipirinha parfait with strawberry and mint salad

Ingredients

  • 2 Limes
  • 3 Protein (size M)
  • 100 g Icing sugar
  • 250 g Whipped cream
  • 4 TABLESPOONS Sugarcane schnapps
  • 500 g Strawberries
  • 4 Stem(s) Mint
  • 1 TABLESPOON Strawberry jam without pieces
  • 1-2 TABLESPOONS Orange liqueur
  • 6 Ringshapes

Directions

    Wash the limes, grate dry and thinly grate the peel of 1 lime. Halve the limes and squeeze the juice. Beat egg white and lime juice (4-5 tbsp.) until stiff, adding icing sugar. Whip cream and sugar cane brandy until stiff. Fold the grated lime zest into the beaten egg white, then fold in the cream. Rinse 6 ring moulds (150 ml each) with cold water, then pour in the parfait mixture and smooth it down.

    Freeze the parfait for at least 6 hours, preferably overnight. Wash, clean and quarter the strawberries. Wash the mint, dab dry and cut the leaves of 2 stems into thin strips. Mix jam, mint strips, liqueur and strawberries and let it stand for about 20 minutes. Turn out the parfait onto plates. Arrange strawberries on top and decorate with mint
