Buttermilk waffles with apple compote

Ingredients

Servings: 8
  • 1 kg sour apples (e.g. Boskop)
  • 7-10 Tbsp Juice of 1 lemon
  • 200 ml clear apple juice
  • 1 package Vanillin sugar
  • 90 g Sugar
  • 60 g Butter or margarine
  • 250 g Flour
  • 1 1/2 TSP. Baking Powder
  • 1/2 TEASPOON Salt
  • 500 ml Buttermilk
  • 2 Eggs (size M)
  • 2 TABLESPOONS Icing sugar
  • 200 g Fresh cream
  • 7-10 Tbsp Cinnamon
  • 7-10 Tbsp Grease

Directions

    Wash, peel and quarter apples, cut out the core. Cut apples into cubes and sprinkle with lemon juice. Boil up apple juice, vanilla sugar, 75 g sugar and apples in a pot.

    Simmer at low heat for about 5 minutes. Fill the compote into a bowl and let it cool down. In the meantime melt the fat in a small pot and let it cool down a little. Mix flour, 15 g sugar, baking powder and salt in a bowl.

    Whisk buttermilk and eggs. Pour into the flour mixture while stirring and mix to a smooth, thin wafer dough. Finally stir in liquid fat. Preheat waffle iron, grease well.

    Bake 8 waffles in a row. Stir the crème fraîche until smooth. Dust the waffles with icing sugar and serve with apple compote and crème fraîche. Dust with cinnamon.
