Wash the strawberries briefly, let them drain and, except for 6 pieces for decoration, clean them. Puree strawberries, lemon juice and 75 g sugar. Mix buttermilk, 50 g sugar, vanillin sugar and liquid cream.
Stir in 3/4 of the pureed strawberries. Arrange the cold dish in 4 deep bowls and stir in the remaining strawberry puree as a flourish. Halve the remaining strawberries and put 3 of each on 4 wooden skewers with a lemon slice.
Decorate the bowl with the strawberry skewers and lemon balm. Small waffle biscuits taste good with it.
