Ingredients

Servings: 6
  • 6 Eggs (Gr. S; important!)
  • 2 Onions
  • 1 Garlic clove
  • 3 Stem(s) flat leaf parsley
  • 4–5 stalks of chives
  • 5 TABLESPOONS Oil
  • 75 ml Barbecue sauce
  • 1 kg minced beef
  • 3 TABLESPOONS Low-fat curd
  • 4 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Cling film
  • baking paper

Directions

  1. 1

Cook the eggs in boiling water for 4-5 minutes. Pour off, rinse with cold water and let them cool down in a cold water bath. Peel onions and garlic and chop finely. Wash parsley and chives, shake dry.

  2. 2

Finely chop the parsley leaves. Cut the chives into fine rolls.

  3. 3

Heat 1 tablespoon of oil in a frying pan. Fry the onions and garlic for about 1 minute. Stir in barbecue sauce and chopped herbs. Remove pan from heat. Carefully peel the eggs

  4. 4

Put the minced meat, BBQ onion mix, quark and breadcrumbs in a bowl. Knead everything well. Season well with salt and pepper. Form 6 equally sized meatballs from the minced meat mixture with moistened hands (it is best to prepare a bowl of cold water).

  5. 5

Place 1 meatball in the middle of a strip of cling film (approx. 20 long) and press it flat with your hands. Place a second layer of foil on top and roll the minced meat with a cake roll approx. 1 cm flat.

  6. 6

Place 1 egg on edge on each flat meatball. Grasp the four corners of the foil, pull them up and bring them together so that the mince is evenly distributed around the eggs. Carefully press on the mince and seal well.

  7. 7

Tip: Then wrap the meatballs individually in foil and put them in the refrigerator for 10-15 minutes - then they stay in better shape.

  8. 8

Preheat oven (electric cooker: 180 °C/circulating air: 160 °C/gas: see manufacturer). Line a baking tray with baking paper. Heat 4 tablespoons of oil in a large pan. Fry the meatballs in it over a high heat, turning them over for approx. 4 minutes.

  9. 9

Carefully place the meatballs on the baking tray and bake in a hot oven for 6-7 minutes.
