Put the flour, milk, eggs, sugar and salt into a mixing bowl and work into a smooth dough with the whisk of the hand mixer. Let the dough swell for about 1 hour. Heat oil in a small pan and bake 8 pancakes (approx. 16 cm Ø) one after the other until golden brown.
Place 2 pancakes on each plate, sprinkle with sugar crystals and serve with a dash of crème fraîche and plum jam.
