Clean, wash and drain the Brussels sprouts. Peel and wash carrots and potatoes. Dice potatoes, cut carrots into slices. Peel onion and cut into rings. Cut sausage into slices.
Heat oil in a pot and fry the onion rings until golden brown. Add tomato paste and vegetables, fry briefly and fill up with broth. Bring to the boil, cover and cook for 15 - 20 minutes. Add the sausage in the last 3 - 5 minutes and heat it up. Season stew with salt and pepper and serve sprinkled with parsley
