Clean and wash the Brussels sprouts and cut the stalk. Cook in boiling salted water for about 10 minutes. In the meantime, cut smoked pork loin into strips. Heat the fat in a pan and fry the meat. Drain the Brussels sprouts and quench briefly.
Mix the Brussels sprouts and smoked pork loin in an ovenproof dish. Season with salt, pepper and nutmeg. Cut the cheese into strips and place them on the brussels sprouts and Kasseler mixture. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 10-15 minutes
