Ingredients

  • 1.8 kg Apples (e.g. Elstar or Jonagold)
  • 4-5 Tbsp Lemon juice
  • 400 g Dark chocolate or couverture
  • 250 g Butter
  • 250 g Walnut kernels
  • 325 g Flour
  • 2 (10 g) slightly heaped Tsp baking powder
  • 7 Eggs (size M)
  • 350 g Sugar
  • 1 package Bourbon vanilla sugar
  • 1 pinch Salt
  • 1 cube (25 g) Coconut oil
  • 100 g Whipped cream
  • 7-10 Tbsp Grease

Directions

    Peel and quarter the apples and cut out the core. Cut the apple quarters in half crosswise and mix them in a bowl with lemon juice

    Roughly chop 300 g chocolate. Melt butter and chocolate in a small pot at low heat while stirring. Remove from the heat and allow to cool for 5-10 minutes. Coarsely chop nuts

    Mix flour and baking powder. Whisk the eggs. Put chocolate in a large mixing bowl. Add sugar, vanilla sugar, salt, eggs, 200 g nuts and flour. Mix briefly with the whisk of the hand mixer to a smooth dough

    Grease a fat pan of the oven (approx. 36 x 41 cm) well and spread the dough evenly on top. Spread apples on top and sprinkle with the remaining nuts. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for 40-45 minutes. Leave to cool on a cake rack for 2-3 hours

    Coarsely chop 100 g chocolate and coconut oil. Melt chocolate, coconut oil and cream at low heat, stirring. Leave to cool for about 15 minutes, then scoop over the cake with a spoon. Leave to dry in a cool place for about 2 hours
