Broccoli cream soup with dumplings

Ingredients

Servings: 4
  • 750 g Broccoli
  • 1 medium onion
  • 2 teaspoons (5 g each) Oil
  • 2 TABLESPOONS Vegetable broth (instant)
  • 2-3 (approx. 300 g) fine uncooked bratwursts
  • 2 discs wholemeal bread (à approx. 50 g)
  • 1 tablespoon (10 g) butter/margarine
  • 1/4 l Milk
  • 7-10 Tbsp salt, white pepper
  • 7-10 Tbsp grated nutmeg

Directions

    Wash the broccoli and cut into florets. Peel or peel and chop the stems. Peel and chop onion. Heat 1 teaspoon of oil in a saucepan, fry the onion in it

    Add 3/4 l hot water and stock, bring to the boil. Cook broccoli in it for about 12 minutes. Heat 1 tsp. oil. Press the sausage mixture into the dumplings and fry them all around for 5 minutes

    Cut bread into cubes. Remove the dumplings from the pan and set aside. Heat the fat in the pan and fry the bread cubes for about 2 minutes, turning them over

    Take out 1/4 of the broccoli, puree the rest in the stock. Add milk, bring to the boil and season to taste. Heat broccoli and dumplings in it. Finally sprinkle bread cubes on top
