Wash the broccoli and cut off the florets. Cut the florets very small. Peel the broccoli stalk and cut into thin strips. Crisply drain the bacon in a pan without fat, then drain on kitchen paper.
Peel the garlic and press it through a garlic press. Wash, quarter and core the apples. Cut apple quarters into small cubes. Break the bacon into pieces. Wash the currants, dab dry and pluck the berries from the panicles.
Mix mayonnaise, yoghurt, vinegar, mustard and garlic and season to taste with salt, pepper and a little sugar. Add broccoli, apple cubes and currants and mix. Finally, fold in the bacon and serve.
