Broad white beans in tomato sauce

Ingredients

Servings: 9
  • 500 g dried large, white beans
  • 2 medium-sized onions
  • 1 Garlic clove
  • 2 (approx. 500 g) Meat Tomatoes
  • 250 ml Olive oil
  • 1 TABLESPOON Tomato paste
  • 1 sprig of fresh rosemary
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 TEASPOON Sugar

Directions

    Put the beans in a bowl, pour 1 litre of cold water on it and let it swell overnight. The next day, put them in a pot with the soaking water, bring to the boil and simmer covered over a low heat for 45-60 minutes. Peel onions and garlic. Dice onions, leave garlic whole. Wash the tomatoes and cut out the stem. Finely dice the tomatoes. Wash the rosemary and shake dry. Heat 5 tablespoons of olive oil in a saucepan, fry the onions and garlic. Add the chopped tomatoes, tomato paste, rosemary and remaining olive oil (or later ?) and season with salt, pepper and sugar. Bring to the boil and simmer over medium heat for 10-15 minutes. Stir in between. Pour the beans onto a sieve, drain and add to the tomato sauce. Simmer the beans for 5-10 minutes at low heat. Season with salt and pepper. Serve hot or cold
