Brioches with cheese and pear filling

Ingredients

  • 500 g Flour
  • 1 TABLESPOON Sugar
  • 1 TEASPOON Salt
  • 150 g Butter or margarine
  • 1/2 cube (20 g) Yeast
  • 3 Eggs (size M)
  • 1 (approx. 200 g) Pear
  • 175 g Blue cheese
  • 1 Egg Yolk
  • 1 TABLESPOON Whipped cream
  • 20 (7 cm ø) Paper baking cups

Directions

    Mix flour, sugar and salt. Heat 100 millilitres of water and fat. Dissolve yeast in it. Add the yeast mixture and eggs to the flour and knead into a smooth dough with the dough hooks of the hand mixer.

    Cover and leave to rise in a warm place for one hour. Wash, peel, quarter and core the pear. Finely dice pear quarters. Cut cheese into cubes and mix with the pear pieces.

    Divide the dough into 20 pieces of equal size. Cut off a third of each piece and form into a small ball. Shape the rest of the dough into a ball and place in a paper baking tin. Press a depression in the middle.

    Add one tablespoonful of the cheese-pear filling to each. Place a small ball on top. Leave to rise for another 15 minutes at room temperature. Whisk egg yolk and cream. Spread the brioches with it and bake in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for 12-15 minutes.
