Mix cream cheese and quark. Divide the mixture into thirds. Roast the flaked almonds in a pan without fat, take them out, let them cool down and chop them roughly. Stir almonds and pistachios under a third of the cream. Peel onion and chop very finely. Finely dice the gherkins. Stir both into one third of the cream and season with salt and pepper.
Season the last third with salt, pepper and chilli. Toast the toast and cut out 8 stars (6-8 cm Ø). Spread sweet cream on top and add 1/2 teaspoon jam to each star. Cut out 8 large and 8 small stars from the slices of brown bread. Spread the chilli cream over 8 stars. Garnish with one crab and one dill flag each. Spread the cucumber cream on the remaining stars
