Brandy nest with marzipan bunny

Ingredients

Servings: 6
  • 50 g Butter
  • 1 pinch Salt
  • 125 g Flour
  • 3-4 Eggs (size M)
  • 200 g Marzipan raw mass
  • 80 g Icing sugar
  • 7-10 Tbsp brown, red and green sugar writing
  • 40 g Pistachio kernels
  • 250 g Mascarpone
  • 150 g Whole milk yoghurt
  • 60 g Sugar
  • 1 package Vanillin sugar
  • baking paper

Directions

    Bring 1/8 litre water, butter and salt to the boil. Add the flour at once and stir with a wooden spoon until the mixture dissolves from the bottom of the pot as a dumpling. Pour into a bowl and immediately stir in 1 egg. Let dough cool down for about 10 minutes. Stir the remaining eggs one after the other with a wooden spoon into the brandy. Each egg must have completely bonded with the mixture before the next egg is added.

    The dough should fall off the spoon shiny and hard. Pour the mixture into a piping bag with a perforated spout and spray 6 circles (8 cm Ø) onto a baking tray lined with baking paper. Bake in a preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: level 4) for 20-25 minutes. (Do not open the door during the first 15 minutes!) Let the fire dough nests cool down for 5 minutes, cut them open crosswise with a saw knife. Leave to cool down. In the meantime knead marzipan and icing sugar. Form 6 larger balls for the body. Roll 6 smaller balls, form them pointed at one end, cut the tip with scissors to form the rabbit ears. Form small paws from marzipan. Put them together with some water or egg white. Paint the rabbit's eyes, noses and buttons with brown, red and green sugar writing. Form small eggs from the remaining marzipan, brush with a little water and roll in 20 g of pistachios. For the cream, mix mascarpone, yoghurt, sugar and vanillin sugar.

    Form small paws from marzipan. Put them together with some water or egg white. Paint the rabbit's eyes, noses and buttons with brown, red and green sugar writing. Form small eggs from the remaining marzipan, brush with a little water and roll in 20 g of pistachios. For the cream, mix mascarpone, yoghurt, sugar and vanillin sugar. Pour the cream into a piping bag with a star-shaped spout and spray on the underside of the nests. Place the lid on top and place marzipan bunnies in the middle. Decorate with pistachio eggs and sprinkle with 20 g pistachios
