Remove the outer leaves from the chicory. Cut the chicory in half lengthwise, cut out the stalk. Peel the onion and cut into sticks. Fry in hot oil. Fry the chicory halves on both sides in the oil.
Pour in the stock and tomato pieces. Season with salt and pepper and cook for about 10 minutes at medium heat. Cut ham into fine strips. Add ham and olives and heat up briefly. Wash chives, dab dry and cut into small rolls.
Sprinkle over the braised chicory. Serve with farmhouse bread.
